0.9 Hectare of manual viticulture, respecting the topsoil of the vineyard. 40-year-old vineyard, worked by hand without using me-chanical means.
Graciano grape is characteristic by its small clusters and small grains.
SOILS
Vineyard grown on white-sandy soils.
HARVEST
Manual in 15 kg boxes. Best clusters selected on the sorting table.
ELABORATION
Natural and spontaneous fermentation. The grapes always ferment in 500-liter oak barrels with an open lid, without temperature control and with indigenous yeasts. The
maceration is variable but can last up to two or three weeks.
Aging for more than 24 months in French and American oak barrels, 40% new and 60% one year old barrels. After aging, a slight clarification and filtering is carried out.
