VINEYARDS
Artisan-manual viticulture without tillage elements. Only manual implements (backpack and hoe) and without using mechanical means.
2.2 Hectares of 80-year-old vineyard, 600 meters of alti-tude in Huercanos, Rioja Alta.
On the wine you can appreciate the smell of scrubland and holm oaks that grapes have absorbed from the vine sur-roundings.
SOILS
Vineyard grown on slopes with reddish clay-ferrous soil.
HARVEST
Manual in 15 kg boxes. Best clusters selected on the
sorting table.
ELABORATION
Natural and spontaneous fermentation. The grapes always ferment in 500-liter oak barrels with an open lid, without temperature control and with indigenous yeasts.
The maceration is variable but can last up to two or three weeks.
Aging for more than 24 months, 40% in new French oak barrels and 60% one year old French barrels. After aging, a slight clarification and filtering is carried out.
